I was
never one to enjoy a breakfast burrito until I was making freezer meals for a
week and realized I forgot to buy bread or even make bread for my breakfast
sandwiches. Then my houseguest buddy suggested I use the tortillas on my shelf,
fill them with scrambled eggs, sausage, and cheese, and roll them up, so why not
try it. I’ve been hooked ever since. I love them. You can freeze them in a
plastic Ziploc bag, take one out defrost in the fridge overnight, pop it in the
microwave for about 40 seconds, and enjoy it with my coffee and juice. So, let’s make some now, you will thank me
for the instructions.
Ingredients:
4-6 Tortillas
4 Eggs
Butter
Milk or
whipping cream
Salt
Black Pepper
Scallions
1 Green
pepper diced
Breakfast
sausage or bacon
Cheese
your choice
Tater tots
or diced potatoes/hash-browns
Directions:
Preheat
oven to directions on Hash-browns or tater tot package. Usually 400 Degrees F.
In a skillet
begin to cook the sausage until completely cooked. Set it aside. Dice up the green
pepper and sauté green pepper and scallions in a skillet with butter until soft. Remove
from skillet and cook the Scramble eggs with some milk or cream, salt, and black
pepper. Once cooked remove from skillet and set aside.
On a
cookie sheet, place 4-6 tortillas out, divide ingredients onto
tortillas, top with cheese, and roll up. Be sure to have the final roll with the flap
side down. Wrap in plastic wrap and place in a Ziploc bag for the freezer. You can
freeze these in the freezer for up to a month. I suggest making enough for a week at a time to ensure no food waste or in case your desire
for breakfast food changes.
