Breakfast sausage is made two ways. Southern style and everywhere else style. I prefer the southern style as it has a better taste. This is the same recipe of seasonings you’d use to make homemade sausage gravy. Each recipe has a bit of different ingredients and the outcome is different, but both are oh so good. So let’s get started making everywhere else breakfast sausage patties.
Southern Style Breakfast Sausage
• 2 tsp. brown sugar, packed
• 1 and 1/2 tsp. dried sage
• 1 and 1/2 tsp. salt
• 1/2 tsp. black pepper
• 1/8 tsp. garlic powder
• 1/8 tsp. dried thyme
• a very small pinch of ground cloves
Everywhere else breakfast sausage recipe.
1 ½ teaspoons fennel seeds
1 ½ teaspoons black peppercorns ground to a fine powder
1 ½ teaspoons dried sage
1 teaspoon dried thyme
½ teaspoon dried rosemary
¼ teaspoon dried marjoram
½ teaspoon crushed red pepper flakes
1/8 teaspoon ground cloves
2 pounds coarsely ground pork (70/30 meat-to-fat ratio)
1 tablespoon sea salt
2 tablespoons maple syrup
Directions:
You can buy ground pork at your local supermarket, but
sometimes I like to make my own. Not everyone has a grinder in their kitchen,
so I suggest you get a sharp knife and start chopping up your pork into finely
chopped pieces. I’ve also ground up pork in a food processor. Either way is
good, just need to be able to mold it into patties as if you were making
meatballs with ground beef.
In a mortar and pestle grind up your herbs until they are a coarse
powder. Then, in a large bowl, combine your pork and herbs with your salt and maple syrup until everything is combined. Set in fridge for one hour to chill, then
take it out and mold into patties.
In a saucepan with a little oil, bring to medium heat add
patties to the pan and cook until golden brown. Or you can place a piece of parchment
paper on a cookie sheet place patties on parchment and cook in the oven at
350 degrees F for 25 minutes or until golden brown.
