Aunt Kate’s Homemade
Scottish Sausage Rolls
Aunt Kate used to
say that all Scottish dishes, except Haggis, were a treat to her palette. I
happen to agree with her, Haggis is nasty and not worth the time of day. But
everything else, especially the Scottish Sausage Rolls is the best. I could
eat these every day, all day. They are that good. The first time she taught me
how to make them I was hooked. I bet you will be too once you try this recipe.
Ingredients
1 lb Ground beef
3/4 tsp Coriander,
dried
1 Egg white
3/4 tsp Black pepper
1/2 tsp Nutmeg
1 1/4 tsp Salt
1 cup Breadcrumbs, plain
1 package of Puff pastry
1 Water
Directions
In a spacious bowl,
combine salt, spices, and breadcrumbs. Mix in the ground beef with around ½ cups of water, using your hands to blend until you achieve a meatloaf consistency—add
more water if necessary.
Roll out puff pastry
on a clean surface and cut it into irregular rectangles based on the preferred roll
size.
Form meat into logs
and place them near one edge of the pastry without overfilling. Lightly dampen
the edges with water to seal, then crimp with a fork for that perfect finish!
Line a baking tray
with aluminum foil, or parchment.
Make three to four
shallow cuts on top of the pastry and lightly brush it with beaten egg white.
Bake in a preheated
oven at 400º F for around 25-30 minutes or until golden brown.
