Crab Cakes

 


When you live near the ocean growing up you crave real seafood and culinary dishes involving seafood. I grew up on Long Island in New York, therefore, I grew up with fresh seafood like clam chowder, lobster, flounder, sword fish, tuna and then I moved to Virginia/DC area where I was introduced to Maryland Crab Cakes, and I was hooked.  You haven't had good Crab Cakes until you've had them at a restaurant along with Maryland Coast Line. That's unless you make them from scratch with this amazing recipe. A Chef friend of mine from Maryland introduced me to this recipe and I've used it ever since, that's been about 30 years now. Dang how time flies. Although April is cooking for one, this recipe produces enough Crab Cakes for 4 servings. The leftovers are worth the extra prep time. 

Ingredients

Recipe yields 4 servings

Cooking Spray

1 pound crabmeat, shredded

1 ½ tablespoons dry breadcrumbs

2 teaspoons chopped fresh parsley

salt and pepper to taste

1 egg

1 ½ tablespoons mayonnaise

½ teaspoon ground dry mustard

1 dash or two of Old Bay Seasoning

Directions

Tip for better Crab Cakes refrigerated for about half an hour, to firm up the cake a little and prevent their breaking up in the pan. Once you’ve taken them out of the fridge, Preheat the oven's broiler.

Lightly grease a broiler pan or baking sheet with cooking spray.

Mix crabmeat, breadcrumbs, parsley, salt, and pepper together in a large bowl.

Mix egg, mayonnaise, mustard, and old bay seasoning together in a small bowl; stir into crab mixture until well combined.

Form into patties and place on the prepared broiler pan or baking sheet.

Broil crab cakes under the preheated broiler until golden brown on both sides, about 5 to 7 minutes per side.

Serve hot and enjoy! Be sure to serve with lemon wedges and homemade cocktail sauce.
