Cauliflower Chocolate Pudding
I can remember the first time Mrs. Cohen said she was going
to make Chocolate pudding with Cauliflower, I about fainted. I was only used to
eating cauliflower with a savory white sauce over it, not chocolate power. But
after she made it, I fell in love with it. It was silky smooth like boxed chocolate
pudding always is after it’s been cooked.
Servings 3 servings
Ingredients
16 ounces cauliflower florets fresh or frozen
½ cup water
5 tablespoons raw cacao powder
3 to 5tablespoons maple syrup
2 tablespoons coconut oil
10 to 15dropsliquid vanilla stevia
½ teaspoon vanilla extract
1/4 to 1/2teaspoon salt
Instructions
Cauliflower and water go in pot on the stove and cook on
high for 20 minutes or until soft. Once it’s cooked, drain the water and place
it in a blender. Then turn it into liquid in the blender. Once blended, add the cocoa powder and blend
until incorporated.
Add the remaining ingredients and continue blending until
smooth.
Serve warm or transfer to individual serving cups or bowls
and chill.
