Horseradish Sauce with Beets

 

Although Mrs. Cohen tried her best to get me to like beets, it never worked. I’ve made this recipe in her honor many times for dinner parties, but never tried it myself. She used to say pair it with a roast beef or fish filet; I can do just the horseradish sauce, but can’t do the beets themselves. Sorry. I’ve been told it’s spicy, sweet, and tangy, with horseradish sauce and tender beet pieces.

 Ingredients

2 medium beets, cooked

3 Tbsp horseradish

1/2 tsp granulated sugar

1 Tbsp white vinegar

1/2 tsp salt

Instructions

Peel and finely grate cooked beets using the fine side of the grater.

In a bowl, combine grated beets, horseradish, sugar, vinegar, and salt.

Serve immediately as a main dish over instant polenta or as a side dish.
