Passover, or Pesach, is a pivotal Jewish holiday celebrating
the Israelites' escape from Egyptian slavery.
It starts on the 2nd of April and lasts seven
days in Israel (eight in the Diaspora). During this time, leavened products are
off-limits as matzah takes center stage! Except this month, I am going to honor my favorite Jewish cooking teacher, Mrs. Cohen. Mrs. Cohen taught me how to make many dishes that celebrate the Jewish Faith and I plan to share them with you throughout April.
The highlight? The Seder—a 14-step feast filled with
symbolic foods that retells the Exodus story.
