Lima Bean Soup is a hearty
and classic recipe, which is made with dried lima beans and leeks. It’s the
perfect comfort food recipe, ready in about 4 hours, including soaking time.
Ingredients
1 pound dry large lima beans
8 cups water
1 tablespoons olive oil
4 carrots (chopped)
2 leeks (white portion only,
chopped)
2 tablespoons minced onion
2 stalks celery (chopped)
8 cups chicken broth
Salt & pepper (to taste)
Instruction:
Soak the beans: Place the
lima beans in a large pot, cover with 8 cups of hot water, and bring to a boil.
Boil for 10 minutes, then remove from the heat, cover, and let the beans soak
for 3 hours. After soaking, drain the beans and rinse them with cold water.
In a large pan, heat the
olive oil over medium heat. Add the chopped carrots, leeks, onions, and celery.
Sauté until the carrots and celery are tender-crisp.
Return the drained and rinsed
beans to the large pot. Add the 8 cups of chicken broth and the sautéed
vegetables. Stir to combine, bring to a simmer, then reduce the heat to low.
Cook until tender: Cover and
let the soup simmer for 2 hours, stirring frequently, until the beans are very
tender. Season with salt and pepper to your liking before serving.
