I always disliked chickpeas, lentils, and sweet potatoes, but
I grew up on a dish called Curry Chicken Soup. So, when I was asked to try this recipe, I couldn’t turn it down, as it was being requested by someone I adored and respected.
Her culinary delights were always amazing, so I agreed. Surprisingly enough, I
liked it and have made it several times, but I leave out the sweet potatoes
because I don’t like them at all. However,
I left the sweet potatoes out of this recipe out of respect for my friend. Enjoy
Ingredients
2 (15 ounce) cans chickpeas (garbanzo beans), drained
and rinsed
1 cup dry lentils, picked over and rinsed
1 large sweet potato, cut into small cubes
1/2 package of frozen Spinach, defrosted and well drained.
1 (15-ounce) can coconut milk
2 tablespoons curry powder (I used mild curry)
1 teaspoon ground turmeric
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon pepper
6 cups vegetable broth
Instructions
Put all ingredients in the slow cooker and mix well.
Cook on high heat for 3-4 hours or low for 6-8 hours. Taste
and add more salt and pepper if you prefer. Enjoy!
